My little pick-me-up guilty pleasure is coconut ice cream.
I recently purchased an ice cream maker and have tried it out with mixed results. My son made an interesting concoction of grapefruit and mint that was very bracing but strangely delicious. We made a clean-your-palate lemon sorbet that was so tart and lemony, it could only be savoured one teaspoonful at a time. The shining star in all of our experimentation is the oh so easy and delicious coconut ice cream.
The freezer now has a permanent space for the ice cream maker bowl and our fridge has two cans of coconut milk in it at all times.
We mix two cans of coconut milk (that have been chilling in the fridge) with 1.75 cups of sugar and 2 teaspoons of vanilla extract and follow the directions provided with the ice cream maker.
This guilty pleasure makes the irritations of the day disappear. I have a little happy dance of anticipation that I do in the kitchen and try to draw out the pleasure of the coconut ice cream for as long as I can.
My sunny days are powered by positive guilty pleasures.
